Whole Wheat / No White Sugar Shabbos recipes

My dh recently changed his eating style, to exclude almost all white flour and sugar. It's been great for him health-wise, but I have no idea what to make! Smile Now I'm starting to think about Yom Tov, and freezing for Shabbosim, and have no idea....I know salads are healthiest, but I have two babies and cannot be sure that I will have time to cut up fruits/veg. before Shabbos/Yom Tov.

So, what I need are recipes for kugels, cakes, etc, with (mostly) whole wheat flour and little or no white sugar. I would prefer to use brown sugar, not Splenda. If you have any ideas for what other healthy things I can freeze in advance, I would really appreciate it.

how bout honey?

I have some nice recipes with honey, and in most dishes (not necc baked goods) u can substitute honey fro ur sugar, using less.

have you seen sugar in the raw/turbinado sugar ... I wonder if this would be good enough ...

but I have used honey in whole wheat challah and comes out yum ...

splenda has it's shortcomings as do most sugar substitutes ...

Brown sugar is just white sugar with molasses.

Sugar in the raw/turbinado sugar is supposedly healthier, and it works the same way, cup for cup, that white sugar does.

sugar in the raw is not really"raw sugar".
at least in the US it is illegal to sell/manufactue raw sugar.
tell us what u want ur substitute to be and we'll help u out.

(I like honey cause its natrual and u know what ur getting, u can also use less bc its so sweet, doesnt hurt for rosh hashana)

Just to bring everyone back to the question at hand....I know that brown sugar is also not so good, but we can't take on everything at once, and right now, this is where we are holding...Smile What I was looking for was recipes, not medical advice.... LOL

I just don't understand how it's considered taking anything on if you'll use white sugar as long as it's colored brown. Confused

Something we love as a side dish:

Pumpkin muffins. the recipe is in the Kosher Palette II.
I use all WW flour instead of white, and you can use honey or pure maple syrup instead of the sugar-just make sure to decrease another liquid called for in the recipe.

DD loves these, and they are pretty healthy-the pumpkin beefs up the nutrition value.

I was under the impression that brown sugar is somewhat better than white. Thanks for the clarification, but as I said before, I was asking for RECIPES...Smile

To all those who asked what I want to use instead, I don't mind using honey, or a little brown sugar. The main thing is that it shouldn't be too sweet, and whole wheat.

Just to answer the op's question: take your regular recipes for challah, lokshen kugel, etc. and replace with w.w. flour/ w.w. noodles, and same with the sweetener.

To clarify: regular brown sugar is just plain white sugar mixed with molassis.
Then theres natural brown sugar which is made from raw sugar and I guess more healthy since its not 'whitened'.

Sides without sugar:
green beans
broccoli kugel
spinach kugel
noodle kugels with whole wheat noodles
sweet potato pie (can use splenda brown sugar blend or splenda)
matza stuffing using whole wheat matza (or whole wheat matzah farfal)
