I don't have a recipe, but this is how I make it:
Cut two Spanish or Vidalia onions in half (from root to head). Then, continue to slice in the same direction (rainbow).
Saute in olive oil or butter low flame 20-30 min
add water, soy sauce, red wine(optional), a little sugar or honey (optional), 2 frozen garlic cubes, salt, pepper.
Garnish with a few croutons in the center.

serve in bowls, top with toasted ryebread and shredded cheese and put the bowls in the owen for 10 minutes so that the cheese melts nicely.
then top with fresh persley.
