Smoked fish chubs

I bought 2 smoked fish chubs, and will cut the heads off to use for Rosh Hashana. My question is: what can I do with the rest of the fish? Is there some kind of fish salad or something else I can make with it?

Why don't you just eat it as the fish in one of the fish courses?
