Parve Leek Soup?

Does anyone have a recipe for Leek Soup that does not contain chicken stock? I would also prefer one without or with just a little potatoes, but I'm interested in all recipes!

I googled your recipe, leek soup vegan and this is some of what I found. Good Luck.

Potato Leek Soup
Ingredients (use vegan versions):

* 5-7 large russet potatoes -- cubed
* 2-3 large leeks -- chopped (Use as much of the leek that you can)
* 1-1.5 yellow onions -- chopped
* 10 leaves fresh bazil -- diced
* 1/8 cup of tyme (dried)
* 3 - 4 cloves of garlic --diced
* salt / pepper / garlic powder to taste
* 1 cup of vegan soymilk (optional)
* Knorr's potato leek soup mix (or Arrow root to thicken a bit)
* 2 cans cream of asparagus soup (optional)
* 8-12 quarts of water

Directions:

The prep time is a bit missleading... This soup will cook for about 2 Hrs, but there's not much prep involved at all!

- Peel and cube the potates

-Put potatoes, tyme and basil into salted water and boil for about 45mins - 1 Hr.

- Add the leaks, onions, and garlic to the mix. Turn down the heat and simmer for another 45 mins - 1 Hr. Stir frequently or the potatoes will burn to the bottom of the pot.... Ugghh.

- Add garlic powder for flavor and a little arrow root to thicken a bit ... When I'm lazy I just use 2 packs of Knorr's potato leak soup.

- Let cook another 5 mins or so stiring freq.

- At this point you could add 1 cup of soy milk. ** My wife likes to add two cans of cream of asparagus soup... but that's optional.

my mother makes a delicious potato leek soup (its one of my fav). she sautes onions then adds them to water throws in potatoes and leeks and spices (cut and flavored to your tastes). cook till potatoes are soft!

Why don't you just use pareve chicken stock??? It's what I do when I want the soup pareve.

I don't like using any dry soup mixes, or boullion cubes in any recipes. I find that they are full of MSG and my husband's stomach cannot tolerate it.

I use the recipee from the kosher palette it's excellent
5-6 leeks
1/2 c. marg
2 celery copped
1 large onion
melt marg in pot and add veg-stir fry

3-4 potatoes cubed
8 c. chicken stock
then add stock and potatoes bring to boil, then simmer for 30 minutes

I personaly blend it afterwards with a hand blender

I do the same recipe but I saute the leeks also once the onions are nice and soft and then add the seasoning let it saute a further two mins and then add salt and dash of pepper, leave it on for an hour and its absolutely delicioius!

And you dont need to add all other ingredients such as soy sauce, basil etc. This is simple easy and tastes great

So easy and so good. Always gets compliments

olive oil
3 large leeks generous with white parts
3 baking potatoes
6 cups of water
a good amount of kosher salt.

Cover bottom of a soup pot with olive oil. I prefer to use white parts of the leeks and some of the softer lighter green parts and discard the stalky, heavy green parts. Chop and rinse leeks well to rid sand. Saute leeks in olive oil for about five minutes or so. Add peeled and cubed potatoes, water and salt. (I'm a bit heavy handed with the salt.) Cook covered about an hour. Puree in blender or with hand immersion blender. You can add more water if it's too thick.

Streit's makes soup base without MSG. I have chicken and onion flavor. I haven't used the onion yet but the chicken works well.
