Usually I add breadcrumbs for soft meatballs.
What can I sub for breadcrumbs, NON GEBROCHS.
Quinoa?
Raw grated potato, onion, Zuchinni?
Mash potatoe?
Mashed something else?
Which is my best option so that they come out soft.
Also want to make a similar mix (different spices) for stuffed veggies, makshi.
During the year I use rice.
Although we are Sepharadim, we don't use rice on Pesach.

Sweet and Sour Meatballs
Sauce:
2-22 ounce bottles ketchup
16 ounces grape jelly
2-15 ounce cans tomato sauce
2 tablespoons lemon juice
1 teaspoon black pepper
2 ketchup bottles of water
2 tomato sauce cans of water
Combine sauce ingredients and bring to boiling.
Meatballs:
6 pounds ground beef or ground dark turkey
8 eggs, beaten
1 cup water (if using turkey, only use ½ cup water)
1 cup potato starch
Shape into meatballs about one inch in diameter (if using turkey, you’ll probably need to wet your hands). Drop into boiling sauce. Lower flame to simmer and cook covered for at least one hour (one hour for turkey–a little longer for beef).

Mashed potato as the starch binder comes out great.
