I would suggest the Arlington kosher hotel in NH. Other options include Catskills, Poconos, a quiet place on the Jersey shore, a city with kosher restaurants like Philly or Boston, and Newport.

Camelback Resort if you enjoy activities like snow tubing and an amazing waterpark!

This. Find a hotel that has a spa on premises and also snow tubing nearby. We've been to Hudson Valley Resort upstate and they have both on premises. The spa is amazing. The hotel rooms not so much.

That sounds nice! If I go with friend and not DH, I don't care so much about the hotel rooms. Did you bring along food?

Washington DC if you are into that kind of stuff can be relaxing and a bonus plus is that lots of them are free/free with reservations so you can save your money for spa and nicer hotel... too

You need to bring food. If you have a car you can drive from the hotel in Kerhonkson to the Woodburn pizza shop for lunch to break it up.
