The 2nd link you posted says a whole chicken feeds 4.
If I’m making chicken on a Tuesday night with one veg and one carb as sides, and that’s the whole meal, I agree.
But on shabbos, after challah, fish with dips/ salads, soup, and now lots of sides plus often another protein.... no way a chicken only feeds 4. I’d say 8 if I have meat also or young kids- or 6 if I don’t. And I’d still end up with leftovers.

on shabbos, about 6. weekday meal with no other courses, 4.
Not sure how big my chickens are but they look average to big.

I like to buy small chickens and they serve 4. I have been to a meal where they served 1 chicken for 6 people and it was not enough. Obviously we didn’t leave starving as there was other stuff, but I would have preferred more chicken rather than filling up on Challah.
