off the back of a container of Hershey's cocoa. I just substituted coffee rich for the milk. Absolutely delicious moist and rich cake and the frosting was also terrific. Got rave reviews on Friday night.

2 c. sugar
1 3/4 c. all purpose flour
3/4 c. cocoa
1 1/2 tsp. baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 c. milk (I used coffee rich and it came out fine)
1/2 c vegetable oil
2 tsp vanilla extract
1 c. boiling water
heat oven at 350. grease and flour two 9 inch baking pans. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla beat on med. speed 2 minutes. Stir in boiling water (batter will be thin). Pour into pans. Bake 30-35 minutes or until wooden pick comes out clean. Cool 10 minutes. Remove from pans to wire rack and cool completely before frosting.
Here's the frosting:
1 stick margarine
2/3 c. cocoa
3 c. powdered sugar
1/3 c. milk (Coffee rich)
1 tsp. vanilla extract
melt margarine. Stir in cocoa. alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk if necessary ( I didn't). Stir in vanilla. Makes about 2 c. of frosting.

thats my best chocolate cake too. I use vanilla soy milk instead of milk or creamer. (I think its healthier too).
