Beet salad
from an internet recipe
1 lb beets (about 6 medium)
1 T sugar
1 T lemon
1 T olive oil
Large pinch cinnamon
1 T dried parsley
Drop of salt
Boil your beets and when they are cool enough to handle them, slip the skins off.
Cut into bite sized pieces and add the rest of the ingredients. Let marinate about an hour before serving.
