Cucumber salad , no vinegar recipe

Any one have a recipe with lemon juice and sugar I guess ? Also how much in advance can I prepare it?

Mine is 1/2 cup each sugar water and lemon juice and a tsp of salt. I like to use kirbies instead of cucumbers and I make 8 kirbies to that liquid ratio. I wouldnt make it more then two days in advance.

I do:

- cucumbers cut thin
- 1-2 carrots cut thin
- 1 small onion cut thin
- salt
- lemon juice
- sugar
- oil (optional)
- water to cover

Can be made a day or two in advance.

Cucumbers sliced in food processor
1 onion sliced in food processor
Juice of 3-4 squeezed lemons
Liberal amount of salt
Pinch black pepper
Liberal amount of sugar
2-3 tbsp oil

Mix very well. Store in fridge with tight covered lid. Let marinate at least overnight. Taste next day. Add more salt, lemon etc if needed to strengthen taste.
Lasts for up to a week in the fridge

I do not add water. The salad gets very liquid from the juices released from the cucumbers.

How many cucumbers would you say per person for the meal ? Half a kirby ?

About 8 adults per meal and one hot veggie side. Also some meals will have a lettuce salad too.

Yes 1/2 kirby per person per meal is plenty. If you have leftover it stays fresh for a week.
