I'm wondering if someone could please help me with ideas for healthy lunches.
Here are some of the criteria:
*easy to prepare
*must be eaten cold
*can include carbs, but not too carb-heavy
*no fish or eggs (allergic to fish, hate eggs)
I would love any help you could offer!

*Open can corn and chickpeas and hearts of palm (slice). Layer in a container, or make a few at a time. Add chopped cucumber and tomatos, sliced scallions if you like. Sprinkle italian seasoning And feta cheese
* slice zuchini, mushrooms, purple onion, sweet potato.Spray c oil and bake at 425 for about 20 min until browning at edges.
Layer those grilled veg with romaine and add feta cheese
*cottage cheese mixed with chopped cucumber, scallion, tomato and sprinkled with everything spice

Yogurt fruit cup with granola.
Ceaser salad. U can make your own dressing and store in container in fridge or buy ready.
Add sliced avocado for some healthy fat. Add a pack Melba toast for light carb.
Sliced vegetables like peppers cucumbers add small vegetables like grape tomatoes baby carrots and baby corn. Dip w chummos, dill dip or Russian dressing. Add some pretzel chips to dip with the chummos.
