I know that an aluminum tin isn't ideal, but I'm wondering if it wold ruin the vegetables.

tomatoes should not be kept in aluminum. Their acidity dissolves the aluminum.
The best way to store a salad is either in a tupperware (or a tupperware clone) or in a regular bowl with plastic wrap on tightly.
