It's your baby and your choice, but I think a one sometimes a longer name can flow nicer with a longer name. I have two kids with double names, and they are called by both names all the time, and they are Avraham Tzvi and Eliezer Yosef. As long as the name flows it's all good. Do you plan on using both names all the time?

She said she can't use Leah.
Another vote for a two syllable middle name.
Bshaah Tova!

I've known both boys and girls with that name. I've known one American "Steve" who used Stav in Hebrew. I think it's a nice sound, but would be too modern for OP.

Does it have to be one syllable?
I don't love any of your one syllable choices with Hadassah.
I love -
Hadassah Leba
Hadassah Liana
Hadassah Lielle
I also liked the suggestion you got- Hadassah Miriam
