I thought I would make cold chicken salad for the last meal before the fast (Shalosh Seudos). What I have in mind is something like shredded or chopped chicken with a mayonnaise dressing. Anyone have a recipe for this?

I've made something like this, but don't really use a recipe. I just make it like tuna salad. Add some mayo, maybe chopped celery and onion, some spices...

I make a reg veg. salad add cut up chicken-usually left overs add mayonnaise salt and pepper. it's always a hit

I'm planning to use kbd's cold meat salad and substitute it with cold chicken. Let's see how it works out.

OK, I just basically made up a recipe for chicken salad. I chopped/shredded the chicken and added chopped celery. I made a mayonnaise sauce with: mayo, little honey, salt, pepper, lots of garlic powder and I mixed it up with the chicken.
I can't taste it till Shabbos, but it looks good!

I always get complements on this salad - you can always omit and subsiture for whatever you have
Chicken
mayo
salt to taste
grapes - cut in halves, or put in food processor on pulse
red onion chopped small
sometimes a little celery.
I sometimes marinate the chicken before I cook it in soy sauce, sesame oil, and brown sugar or sometimes just salt if I am in a rush.
This tastes best if it is mixed the night before.

I just mash up the cooked chicken till it looks like tuna, then add in mayo and chopped celery or red onion. Just enough till it looks right.
