For those who don’t work, and don’t have young children at home all day—what do you do with your time? Other than managing the house, shopping, cooking, etc.?

I'm disabled. I spend all my time between running errands and managing the house, just trying to recover. Too much activity can cause a relapse. That includes just going to the bank and back.
I spend a lot of time trying to minimize the pain I'm in, trying to stay in contact with friends, and chasing down social services to get the extra help I need.
Being chronically ill IS a full time job.

people in my community who aren't working and don't have small children go to the gym, shiurim, art classes, volunteer.

My kids are out of the house from around 9 - 3.
3 pm my day is over. Till ybey go to bed, I have a few minutes to tidy up and then dh comes home and then I crash and then it's my bedtime....
I gave zero help from dh becuase he just is never home to help! He works long hours.
So just being a mother and wife amd a house / property keeper with veeery little cleaning is busy....
But bh I do have time to imamother, puzzles, nap, exercise/walk, weedwack (there is a special enjoyment in it. Lol).
I also do a few hours a week of computer work at home job.
