I need really easy recipes. Life is overwhelming me at the moment. Hoping someone here has a great lazy recipe for potato dumplings using the boxed instant mashed potatoes and contains no matzo meal.

I can post how to make instant mashed potatoes with water from the urn that tastes good and you can make it right before a meal. Hopefully the KLP potato flakes taste as good as the Idahoan 100% potato flakes.
You can also buy the KLP latke mix and use that to make some sort of dumplings like you wanted.

How about some shortcuts like baking whole mini red potatoes covered in the oven and then refrigerating? Turn it into a potato salad on YT.
Or baking plain quinoa and refrigerating? Then tossing with lemon, oil and vegetables on YT before the meal.

2 cups instant mashed potatoes, 3 cups boiling water, 2 crushed garlic cubes, 2 heaping tbsp smart balance marg (or oil or mayo on pesach), 1 tsp salt. Mix well and quickly. Adjust salt to taste.
