Is there a way to make crepes/lukshen in advance and freeze them? And doesn't get hard or freezer burned?

If you have managed to freeze them successfully, what are your tips?

Roll each one up tightly. Lay them on foil together and wrap up very well. Seal a second time in a Ziploc with air pressed out.
Remove and slice into noodles curls as needed.

Does the texture change at all? Also does each roll need to be individually wrapped or multiple rolls in one foil?
Davka slice into noodles after defrosting?

It tastes pretty good especially in boiling hot soup. You can slice when frozen but allow to defrost before adding to soup.
Don't freeze already sliced. Too much freezer taste.
No need to wrap each crepe in foil. Foil wrap a bunch of individual rolled ones together in one foil and Ziploc.

I fill and freeze. (sauteed cabbage and carrots and onions or mashed potatoes)

I want to make potato blintzes. Will that work? I don't think it makes sense to freeze it with the filling so I was thinking to just make the crepes and freeze separately... has anyone done that successfully?

I would freeze it with the filling and brown the outside layer fresh.

I also couldn't figure out why you got hugged Mommyg8. Maybe we all need hugs this week so I added one too! Back to your crepes- if you freeze them unfilled they're fine for defrosting and cutting. If you want to fill them after you froze or refrigerated them they'll probably crack and break as you try to roll them. If you have to fill and roll cold crepes, wrap them well in parchment paper and then foil. Put them in in the oven on a low temp to warm up and soften them.
