So the few times that I’ve made brisket I’ve done it in the slow cooker. I now decided to make it in the oven. It’s on 275° (for reference the brisket itself is about 2.8 pounds). How will I know when it’s done? I don’t have a meat thermometer for Passover.

I do meats on 300, bake 1 hour per pound.

I don’t I have the package anymore but I recall that it said flat brisket
