Suggestions for vegetable side dishes to feed a large group that can either be made in advance (and frozen) OR require very little prep time before Shabbos. Can't contain EGGS so that excludes most kugels. Bonus if they can be served at room temperature.

Roasted green beans. Lay out 1 1/4 lbs trimmed green beans on each cookie sheet. Drizzle with a drop of oil, fresh crushed garlic, coarse salt and toss to coat. Bake uncovered at 400 for 8 minutes. Don't be tempted to bake for longer - they soften more as they cool and you want them to still be somewhat crisp and without wrinkles. Sprinkle with sesame seeds.

Cauliflower roasted (or baked! But so much more heaven roasted) with oil, salt, pepper, garlic, onion powder, paprika, turmeric, brown sugar.

Roasted carrots. Slice into circles, drizzle with honey, lemon juice, kosher salt, pepper and a pinch of parsely. Roast until fully cooked, ok to serve cold.

Frozen vegetables!!!
Fine green beans, bag of mixed red,green peppers and onions, broccoli...(add or omit according to your taste!)
You can add mushrooms, baby corn...
Drizzle with olive oil.
Add cubes of frozen garlic, salt and pepper
Broil in oven for about 15 minutes.
So easy and delicious!

saute onions ( garlic if you like) add greenbeans & mushrooms, saute a bit. Add strips of pastrami later to saute a bit, till crisp.
Put in spices you like little salt pepper etc

Frozen peas with sliced onions and mushrooms is so easy! Sauté in a pan with a little olive oil, salt, garlic pepper.

I like making jasmine rice with a crispy top
Make rice as directed on the package
Take a tin smear oil or the bottom
Tightly pack, but not smush,
Before Shabbat put it on the blech
Before serving flip on a platter the top will be golden brown yummy crispy
If you want to be fancy you can toast nuts and put it around the edge of the platter
