I am now in possession of way too many tomatoes and want to make a salad. I'm looking for something different and was wondering if there was a recipe involving olives/pickled cucumbers or mushrooms?

or you can make tomato soup
For the salad, just do the above veggies with olive oil salt pepper and some scallions or purple onions
