It can be frozen. I have done it and my mom does it all the time for yom tov.

I don't like frozen vegetables but it's a matter of taste.
When I have frozen, I undercooked (cooked for half the amount of time) and only froze for 2 weeks.

I freeze it. I hate mushy vegetables as well but in my experience the vegetables in a ratatouille are fairly mushy anyway. It's like freezing minestrone or other vegetable soup. I would never freeze a stir fried vegetable and I don't generally like frozen vegetables except for some exceptions like peas or winter squash.
