I'm lucky we don't do a big deal with simanim. There are some perks to being chasidish Very Happy.
Our simanim only consist of carrots, fish heads, and apple dipped in honey. I dont have to cook any special simanim.

Mama bear, I don't envy the people who leave everything for the last minute. There's enough what to do last minute. It must be extremely overwhelming to do "everything" from scratch the last minute

Before I had kids I did all my cooking about a 5 hour stretch and it worked fine. So it just depends on the stage of life and stamina you have ( and how much you cook). Do what works for you

My neighbors (Chassidish) just discussed, that they do the full gamut of simanim. Her mom is bz with it for last few weeks already, and makes mishloach manos packages, with all of it neatly packed up, for all the marrieds.
She said they do spinach, leek, black eye beans, a snake shaped squash, idk what else besides for the regular chassidish simanim

I don't even come close to all of you's. And that's ok because I honestly don't know how y'all consume so much food.
We do for each meal, challah and dips, and baked fish (choice of 2).

Then one main dish, one side, and vegetable salad. One dessert.

Main dishes:
pickled chicken roast
brisket
breaded dark cutlets
deckel

Sides:
ferfel and tzimmes for tradition
Don't have any yet but hoping to make roasted veggies, fresh mashed potatoes. If I'm really geshikt I'd like to make shlishkes and vegetable blintzes.

Desserts:
Applesauce compote
apple cobbler
blueberry pie
coffee cake

Thunderstorm, I'd love your peanut butter ice cream pie recipe. It would great for us for Sukkos.

I never made it. But I plan on mixing semi defrosted vanilla ice cream and creamy peanut butter with a mixer and adding in salted peanuts , then pour it into a ready graham cracker crust and sprinkle more salty peanuts on top with a drizzle of chocolate syrup or something like that. Or maybe even make an chocolate ganache layer on top and freeze.

We do all of these listed but everybody gets their own little plate and there's a little of everything on there. We start off the meal with that and go through all the Shehechiyanus.

I know people do lots of simanim, I was responding to mama bear who say chassidim don't do all this. My neighbor's family is Sanz.

(Leek patties, roasted beats, roasted butternut squash, carrots, head of fish, fish, dates, black eyed peas, pomegranate, apple and honey...not sure what else I am missing)
Soup...probably chicken
Main Not sure what yet
Veggy

Monday day. Company
Need an appetizer.maybe I will do a salad in wrap bowl or a veggy stack or salmon over angel hair

Soup. Not sure yet what but probably either butternut squash soup or potato leek or both, one on each side of bowl. It looks pretty

Main
Standing rib roast
Honey Chicken on the bone...
Roasted potatoes
String beans
Maybe grilled mushrooms

Monday night
Simanim and new fruit
Tongue
Rice
Veggy

Tuesday
I think I am going to make a BBQ with steaks and hot dogs and some sides
Or we will have leftovers from other meals

I do simanim both nights. Why not? Like pesach seder both nights. My only difference is adding shehechyanu on nt 2

Is this a typo or do you really use 2 cups of oil, Ema?

pomegranate honey chicken
2 pkg leg quarters
1/2 c honey
1/4 c brown sugar
1/4 c pomegranate juice
1/4 c teriyaki sauce
2 TBSP corn starch
1 tsp tomato paste
1/2 tsp thyme
2 cloves garlic, minced
Pomegranate seeds

Preheat oven to 400

Line roasting fish with foil, arrange chicken in single layer.
In pot over medium heat, combine everything except pomegranate seeds. Whisk in margarine. (I don’t know if it wasn’t listed in the ingredients or if I just left it out, but I used 1 TBSP) Reduce heat, cook 1 minute. Brush on chicken, pours extras over and around the chicken. Bake covered 45 minutes, basting every 15 minutes. Transfer to serving dish, pour remaining spice on top, garnish with pomegranate seeds.

apples and honey brisket
5lb brisket
1 1/2 c apple cider
1/2 c apple sauce
1/3 c honey
2 cloves garlic, minced
1 onion
3 apples
Salt
Pepper

Preheat to 400

Place meat in roasting pan. Peel apples and onion, slice into thin wedges. Scatter over and around meat.
Whisk together remaining ingredients. Pour over meat, cover tightly. Bake 4 hours.
Remove from sauce, wrap in foil. Refrigerate until cold. Remove and slice. Reheat in sauce.
