fresh food is so much better! If you can leave your oven on you can cook fresh chicken, roast veggies, rice and so on. roasts can be cooked in slow cooker.
I have to be in shul on yom tov but I get up early and spend about an hour prepping fresh food. On rosh hashana I breaded schnitzle before shul and cooked them just before the meal. So good! No one looked at my expensive reheated roast and ate all the schnitzel. (it was a fancy lemon schnitzle from a susie fishbein book but hardly more complicated then regular)
Just freeze chicken soup without carrots. You can always add a few fresh ones when reheating if you want.
We have so many heavy meals on yom tov so think about making some lighter fun meals. Eg one meal you can do subway sandwiches with cold cuts, or wraps and fillings. (great way to use up leftover roasts and chicken) You could even plan a bbq if you have nice weather and your sukkah layout allows that.
Salads are always made fresh on yom tov. Buy lots of veggies, hearts of palm, sweetcorn, avocados etc
