Shakshuka is the first thing that comes to mind.
We make rice and top it with yogurt and grated cucumbers. I dont have an exact recipe for this but you can experiment with it. You could make it with plain rice or a risotto.

My dh is israeli. not sure if e/t his mom makes is israeli but here is what he grew up with and I still make for him...
- shakshuka (I started buying the shakshuka sauce instead of making it from scratch), -=
- spaghetti melted with butter & feta cheese and fried potatoes
- Greek Salad!!!!obsessed!
- eggplant parmesan
- lasagna
- stuffed shells

***oh can he not eat carbs?

I'm an Israeli vegetarian with celiac dh. Here are some of our favorites:
*Crustless quiche made with sauteed onions and swiss chard, salt pepper and garlic, eggs, and a mixture of mild and hard salty cheeses (here in Israel I use yellow cheese and kashkaval, or swiss-like edam cheese and parmesan).
*Quinoa tabouli made with lots and lots of chopped fresh parsley and mint and seasoned with very generous amounts of olive oil, fresh lemon juice, salt and garlic. And chopped veggies of course.
*Majadera (seasoned rice cooked with lentils and topped with fried onions.)
*Lasagna with layers of thinly sliced (lengthwise) and roasted butternut squash and zucchini instead of noodles.
*Stir fry (I make an Asian style brown sauce with GF soy sauce, brown sugar, sesame oil, chili flakes, and fresh minced ginger and garlic). Use any veggies you like. I prefer tofu, broccoli, thinly sliced carrots, and celery. Things like water chestnuts, snow peas, and bamboo shoots are great, too, but know they're not at all common in Israel. This is really nice served over rice.
*Vegetable curry. My favorite is onions, tofu, potatoes, cauliflower, and tomatoes, slow simmered in a sauce made with coconut milk and curry powder. But like the stir fry, use whatever veggies you guys like. Also great served over rice.

Eta Sorry I just realized most of these are parve, not dairy like you requested. My bad!

Any stir fry veg with melted cheese. Besides diff veg mixed, you can do it with only zucchini or only mushrooms etc.

spinach/mashed potatoes with melted cheese.

layer in saucepan/big frying pan, diced onions, first saute little maybe, then add cubed zucchini, then add cubed potatoes, tomatoes & shredded cheese. spices. cook for an hour. don't stir everything together.

crustless veg quiche with eggs & cheese no flour, baked in oven.

baked ziti made with zucchinni or spaghetti squash.

spaghetti squash boat filled with sauteed veg & melted cheese.

cantaloupe with cottage cheese

red cheese salad-farmer mix with sour cream paprika & spices, can add in purple onion.

red reddish salad with sour cream & scallions.

dairy mushroom soup made with heavy cream

stuffed portabella cap with sauteed veggies & melted cheese.

falafel ball parmesian- just tasted by a party

layered potatoes & eggs with sour cream & spices in oven

You could do any pasta dish with brown rice pasta
