Is it really bad to give your 5 month old baby ready made Gerber carrot soup instead of making it yourself?

No. Why would it be bad? I have only made my own baby food because it was something I had on hand and it was more economical

It's actually very smart! I am getting my baby food from WIC so it's cheaper than doing it myself.....
My baby (8 months) loves those jars and gains beautifully, I use these jars for breakfast and lunch for him and for dinner I give him pureed chicken and vegetables from the chicken soup.

How do you purée chicken? Just with a hand blender?

Nothing wrong with it, but none of my kids cared for purees. I fed them homemade soups or let them explore finger foods.
