Anybody have a recipe that calls for zuchinni? (Aside from the recipe in the purple cookbook for zuchinni kugel) Thanks

zuchinni sufle (sp?)
shread the zuchinni, add eggs, onion powder,salt, garlic, pepper-a little flour is optional. bake it on 350 its yummy!

what about a soup, saute onions garlic and zucchini abot 6-8 and then boil with salt and pepper. it's yummy, my mil makes it all the time.

are you looking specifically for a kugel recipe? if not, here's a nice side dish:
Dice & saute: 3 cloves garlic
1 onion
When golden, add: 3 zucchinis (diced)
1/2 green pepper (diced)
let sit in pan till soft. turn off fire
Add: 1 small can tomato sauce
3 Tbsp. brown sugar
black pepper (add to your taste, as peppery as you like it)

take out the inside of the zucchini while it is whole and stuff it with a meat mixture of some kind. I guess the same way you make hamburgers do the same for the stuffing if you want you can add some rice to it. and then stuff it and cook as if you are making meatballs. it is delicious.
with a pareve one. stuff it with a rice, and veg. mixture and cook as if you are doing meatballs. you have it in the spice and spirit cookbook for pareve ones on page 176, and 174 enjoy hope this helps.

simple, but great:
zukini
onion
salt pepper
shredded carrot (optional)
slice zukini and onion thinly. sautee till soft (with carrots if you want). season with salt and pepper
I only use the carrots for a catering job-it looks fancier.
if making a large amount, you can bake it-covered loosely- at 350 in the oven. For an hour or till it looks ready.
I also have a recipe for zukini fudge cake. let me know if you're interested, and I'll post it

the only time I peel zukini is if the peel looks bad. otherwise I never peel it- no reason to
