Mine was matzah pizza. I don't have a special recipe or anything, just plain old matzah pizza. I don't know if that means that I'm a bad cook or I just have simple tastes.

I cooked very simply this year and also didnt have the opportunity to eat any meals at family or friends. I made an incredible brisket and delicious chocolate chip cookies. Those were probably the standouts.

I made a great lasagne. Best sauce I ever made, with all the flavour coming from the vegetables and virtually no seasoning. I have to think about this for the future.

My favorite things to eat on Pesach are things that never required chametz in first place. Salads, fruit, etc.
Made a nice roasted cauliflower and feta salad, plus a raw broccoli salad.
Shezek are in season, and they are so light and refreshing.
Quinoa with fried onions and chopped apricots.
Yum.

Well, it's only an approximate recipe.
Saute one onion, one pepper, and a few cloves of garlic.
Add a few sliced mushrooms, and handful of frozen spinach, and four diced tomatoes.
Leave to cook for a few minutes, then add one of the smallest size containers of tomato paste, salt to taste and enough water to make the whole thing liquidy, but still thick. Err on the side of caution - you can always add more later.
Add a dribble of silan. Not enough to make it sweet.
Cover and simmer for around 20 min.
To make the actual lasagna I used a disposable pot, since that gave me lots of depth. I used hand matza, since we had a lot left over, and the round shape fitted the pot better. I think the slight thicker matza worked better than machine matza would have.
Layer of (slightly cooled) tomato sauce.
Layer of matza.
Layer of gvina lavana.
Layer of ricotta.
Layer of sliced cheese.
Layer of tomato sauce, matza, etc.
I did three repeats.
Top layer, matza, thin layer of tomato sauce, and thicker layer of grated cheese. Bake.

My baby is allergic to pesach, so I had to topsy-turvy all my regular recipes! (I'm still nursing)
My favorite thing was vegan (dairy and egg allergies) cranberry muffins!
