I wanted to have some shelf stable panic foods so I ordered from Eden foods. So what ideas do you have for me?

I love to make this and have it for lunch https://www.bonappetit.com/rec.....ouleh I add feta to make it more filling.

I have made many different variations on quinoa patties. If you do a google search you will find a ton of choices.

One of my favorite recipes: Curried Quinoa
Ingredients Original recipe makes about 3 servings
2 tablespoons olive oil, or as needed
1 small onion, diced
2 cloves garlic, minced
1 cup quinoa
2 cups chicken broth
1 tablespoon curry powder, or to taste (start with less to make sure you like it)
1 tablespoon ancho chile powder (or paprika) (start with less to make sure you like it)
Lemon juice, salt and pepper to taste

1. Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 3-5 minutes.
2. Pour broth into the pan and bring to a boil. Reduce heat and add curry and chile powders; cover and simmer until tender, about 25 minutes. Season to taste with lemon juice, salt and pepper.

Here's another family favorite, got the recipe from my friend, not sure the original source:
1 cup quinoa
2 cups water
3/4 cup peeled, diced carrot
1/3 cup minced scallion
1/3 cup minced parsley
1/4 cup sunflower seeds, lightly toasted (or can use pine nuts)
2 cloves garlic, minced
3 tbsp lemon juice
2 tbsp olive oil
1-2 tbsp soy sauce
salt, pepper to taste

The quinoa has to be rinsed very well in a sieve to wash away the chaff, which has a bitter taste. Then you have to toast it in a dry skillet until it's fragrant and starting to pop. Then pour the water over it, bring it to a boil, and simmer, covered, 12 minutes. Leave it covered while it cools and absorbs the remaining water, then toss with the remaining ingredients and chill. If you don't toast the quinoa it comes out kind of sticky and gummy. That's it! Enjoy.

There's this great quinoa salad with roasted vegetables, I think it's in Rivky Kleinman's cookbook. I may be getting her name wrong.
I also prepare layered quinoa salad in Mason jars, I put the dressing on the bottom, quinoa, broccoli, cooked string beans (or raw), roasted peppers, onions for those who want, and mixed greens on top.

I do it like a veg/rice.
cook up quinoa in salted water. drain.
sautee some veggies with onions. spices. combined with cooked quinoa.

I once saw a recipe in a magazine to use it as stuffing for chicken or capons. Don't have it though.
