Pitas don't puff!

Why??? I've used many recipes out there and none of them work for me. Today was my latest failure, so I rolled the dough very thinly and turned it into laffa. What am I doing wrong?

Turn oven to highest temp and put a sheet pan to get hot. Roll pita flat, make them about as big as your hand, no bigger. Smaller might be better to start with if you're having trouble. Bake on high for 4-5 minutes. I used my quick, no rise pizza dough, and they worked perfectly, made a great pocket in every one.

I do the pitas in a pan in the stove and they come out great I can post my recipe later

Yes like others have mentioned, try making them on the stovetop. Preferably on a cast iron griddle or the like!

If you want to make it in the oven, try a pizza stone.

They should be very thin and the oven or pan should be very hot... a preheated pizza stone would help.... on maximum heat...

And sometimes they just don't...
