This was another easy recipe that resulted in an excellent result. The marinade is easily prepared by dropping all ingredients in a food processor and then the chicken is marinated for at least six hours but longer the better so I started the marinade the day before.

The Spiced Carrots were an excellent side dish and equally easy.

Cilantro-Lime Chicken With Spice Roasted Carrots

This chicken dinner is spiced with classic Latin flavors like cilantro and lime, and it gets an Asian kick from soy sauce and ginger.

1    cup fresh cilantro leaves, packed
1    cup fresh mint leaves, packed
¼   cup fresh tarragon leaves, packed
½   cup olive oil
⅓ cup soy sauce
¼   cup lime juice
3    tablespoons cider vinegar
5    cloves garlic
1    jalapeño, sliced
2    tablespoons chopped peeled fresh ginger
1    teaspoon dried oregano
1    teaspoon ground cumin
3    pounds assorted chicken parts like thighs, drumsticks, and wings
⅓ cup mayonnaise


1 ½ pounds medium carrots, quartered lengthwise
2    tablespoons olive oil
1    teaspoon ground cumin
½ teaspoon smoked paprika
Freshly ground black pepper

1 In food processor, puree herbs with oil, soy sauce, lime juice, vinegar, garlic, jalapeño, ginger, oregano, cumin, and 1 teaspoon salt until smooth. Transfer ¾ cup to small bowl; set aside.

Transfer remaining marinade to gallon-size plastic bag and add chicken. Seal bag and toss to coat. Refrigerate and marinate chicken for at least 5 hours or up to overnight.

Preheat oven to 375°F. Line a baking sheet with foil and place a wired rack on top. Arrange chicken on rack. Discard leftover marinade in plastic bag. Place the baking sheet with chicken in the oven and bake 30 minutes.

After 30 minutes, increase the oven temperature to 450°F. Roast chicken for another 15 to 20 minutes, or until chicken is cooked through (165°F).

While the chicken roasts, whisk together reserved marinade and mayonnaise in a small bowl. Set green sauce aside. Serve chicken with green sauce and Spice-Roasted Carrots.

5 Prepare Spice-Roasted Carrots: In a large bowl, toss the carrots with oil, cumin, paprika, and ½ teaspoon each salt and pepper. Transfer to a rimmed baking sheet and distribute evenly. Roast carrots in 450°F oven for 30 minutes, or until tender, stirring twice.
