What happened was, I once had a frozen tray of cholent meat, much more than I needed, so I prepped two crock pot bags and cooked them side by side, adding potatoes to one and freezing the other. There's no difference in taste, IMO.

Are you kidding? I do this every year. I double all my Pesach roasts, freeze them sliced and ready in ziplock bags...defrost and heat when needed.
And that leads me to my tip: Double everything you do. It's half the effort of doing it twice.
Two cheesecakes (I make one for my sister, but you can freeze and pull it out for a special Shabbos treat in the summer), two batches of chocolate chip cookies, two babkas, two pans of lemon bars, double batches of two kinds of lukshen kugel, etc....
My blintzes and cheese babka and cheese rugalach all are from the same filling recipe.
I made doubles (or triples) of all the pastas, blintzes, etc...pretty much everything I made for Y"T.
All of this stuff will come out of the freezer over the summer while I chill.....
