We LOVE rice pudding. I especially buy short grain rice for this, and use it as a way to use up extra milk. But every time I cook rice pudding or oatmeal with milk, for that matter, the milk makes a mess on the bottom of the pot. I stir it very often but it still leaves a residue that takes forever to scrub clean. It takes about 5 times of alternating scrubbing, soaking, boiling with baking soda, scrubbing with salt, etc etc. I'm about to stop making rice pudding if we can't come up with a solution.

I make it in the oven, and use baking paper inside the oven tray. Maybe you could line your pot with baking paper? Or those bags that they sell to line crock pots might work. You'd have to check if they could stand up to the higher temperature.

Perhaps try greasing the pot first? Or using a lower flame?

Or use disposable pots.

What type of pot are you using? A clay pot, Dutch oven, or non stick pot might solve your problem. Or a pot with a heavier bottom (thin bottom pans don't distribute heat as evenly). You can also try lowering your heat and cooking for longer.
