My recipe calls for a lot of honey and sugar. I want to cut down on that but still enjoy a delicious challah. Anyone have a good recipe to share with lower sugar content?

Just cut down on the sugar...
I normally use 1 tablespoon of sugar, which I put in the water with the yeast, for 1 kg of flour, and my challa is delicious...
So basically I use
42 g yeast
1 tablespoon sugar
1 glass of water, mix all ingredients above and let rest for 10 minutes
1 kg white flour
1 egg
2 teaspoons of salt
add water with yeast plus 2 more glasses of water.
Knead dough for 10 minutes, add 2 tablespoons of oil while kneading (I knead by hand, oil makes it less sticky, if you use machine, add oil upfront)
Let proof for about 1h, till it doubles in volume
form challot
put eggwash on challot
put either challa-mix or poppy seeds or black cumin seeds or sesemy seeds & kosher salt on top
let rest for 1/2 hour
Bake in preheated oven at 230°C for 20 min, with steam...
This challa conditioning mix contains sesamy seeds, garlick powder, onion powder, salt and I think poppy seeds. It gives the challot an excellent taste...
