I'm trying to find a recipe for a healthy muffin for Pesach made with almond butter (for protein & hopefully instead of oil), whole grain matza meal (because all the recipes with mostly almond flour have tons of calories and fat), a little almond flour/some potato starch would be fine, bananas to make it sweet (although I'm not opposed to using some fake sugar), and chocolate chips, of course-my go to "treat" during the year is a nugo slim bar. I'm trying to make a Pesach treat and would appreciate any help! Thanks!
