Mexican Cuke Salad
from another site, with my changes
1 cucumber, chopped
8 oz canned corn, drained (or equiv fresh)
1 16 oz caned tomatoes, drained, or equiv amount fresh
1 cut green pepper
1 cut up red pepper
2 T vinegar, red wine if you have it
1 T pepper (red and black if you have it)
1/2 tsp garlic
1/2 tsp cumin
1/4 tsp cilantro
1/4 tsp salt
Toss together your veggies and add the seasonings. Let chill for 30 minutes and serve.
