Inexpensive cabbage recipe, anyone?

I'm bored with coleslaw and there are really neat recipes here but they all seem to have such exotic ingredients. anything more heimish that's also a little different?

Don't know if these cabbage salad recipes are 'too exotic' or expensive, but these usually go over pretty well:)

Purple Cabbage Salad

2 bags purple cabbage (I used one and a half and it was plenty!)
onion garlic mini croutons
1 red pepper diced
slivered almonds:
2 Tbsp sugar disolved in 1-2 Tbsp canola oil. Mixed slivered almonds over LOW fire. Turn until roasted- WATCH

Dressing:
1/4 cup olive oil
1/4 cup vinegar
1/4 cup sugar
1/4 cup ketchup
1 tsp paprika
1 tsp mustard
1/2 tsp salt
1 clove garlic

Don't dress until right before serving and be generous with the croutons- (also put in right before serving cuz they get soggy)

Mrs. Ungar's Chinese Cole Slaw

1 pkg cole slaw mix 1 oz. sesame seeds, toasted
1/2 red onion, diced (optional)
3 oz. slivered almonds, toasted

Dressing:
1/2 C. Oil 1/2 tsp. salt
1/3 C. sugar
1/4 tsp. pepper
1/3 C. vinegar

2 handful thin chinese noodles

Combine salad ingredients together. Mix dressing ingredients together. Pour dressing over salad 1-2 hours before serving. Top with chinese noodles right before serving.

Confetti Slaw (Cumin)

1 bag shredded purple cabbage
1 medium tomato, chopped
1/3 c. green olives (with pimentos), sliced
1 sm. red onion
handful sunflower seeds

Cumin Dressing:
1/4 c. oil (I like to use juice from the olive jar and then add a little oil)
2 T. tarragon or wine vinegar
3/4 t. salt
1/2 t. ground cumin
1 sm. clove of garlic, crushed
dash of pepper

Mix ingredients, pour cumin dressing over salad and toss. (If I'm in a rush, I skip the red onion and tomato, substitute garlic powder for the crushed garlic, and the salad still tastes great

MARINATED DINNER SALAD

2 lb cabbage (that's about a kg) thinly shredded
3 carrots, sliced thin
2-3 green peppers, diced
2 onions cut in thin rings
2 cucumbers, sliced thin (be careful, they vanish)


Combine all ingredients. Pour dressing over mixture. Let marinate 1-2 days, stirring occasionally (I put in leak-proof Tupperware and keep turning the bowl).

Dressing:

5 Tablespoons sugar (taste, perhaps less)
9 Tablespoons vinegar (cider, white)
3 Tablespoons warm water
6 Tablespoons oil
2 tsp. salt

I always taste a few times during the marinating to make sure it's salty enough, the original amount is not enough for me.
