In the past I’ve made a stew for the day meals on rosh hashana so I can go daven and forget about it. (Meat potatoes carrots sweet potatoes in a pot with water).
Looking to do something like that but not swimming in water, like maybe in a roaster pan in the oven. Thinking of using a second cut brisket because it’s fatty…
Any ideas or suggestions how to make it on the drier side but enough liquid so it doesn’t burn??

Miriam pascal posted a meat and gnocchi one pan dish that looks delicious and the liquid amount can be customized.
Lay out your meat in a pan, one layer only. Season both sides generally. Later sliced onions on top. Add Red wine and/or chicken broth. Unsure when you would add the gnocchi but you can check on her Instagram page in the saved highlights (3 ing recipes I think it’s called).

You can bake minute steak in the oven (low and slow) with lots of onions. Add potatoes, carrots, sweet potatoes around the steaks.
