Not everyone keeps the minhag of two seudot on Erev Yom Kippur. Among those who do, the morning meal will often be light one.

The Rambam says you should not eat fish for the seuda hamafseket, in case you choke on a fish bone and die before you have been forgiven.

We always have a milchic Seudah, including fish for after the fast.

For the Seudah hamafseket I serve challah with honey, chicken soup with kneidlach and kreplach.
The main course is potatoes (cooked in the soup), chicken, vegetables from the soup and salad.
Fruit and cake for dessert.
Lots of water.
It's a meal to make simple and beautiful, not one for all the fancy touches

Challah. Chicken soup with lots of vegetables and maybe knaidlach. Simple roasted chicken. Roasted broccoli. Brown rice. Honey cake. Gatorade!
