My recipe is for a pressure cooker, but it can almost certainly be converted to oven use if you need.
1. Rub 1 tsp salt, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp pepper, 1/2 tsp smoked paprika over roast
2. Heat Instant Pot, add 1 T oil. Brown roast on all sides.
3. Add 1 pound baby red potatoes, 4 large carrots cut in chunks, 1 large onion chopped, 4 cups beef broth
4. Cook 60 minutes for 3 pound roast, 80 minutes for 5 pound roast.
5. NPR 10 minutes.
6. Remove solids
7. Add 1/4 cup water with 2 T corn starch to thicken gravy\

1 Tablespoon of
Ground coffee
Cocoa powder
Onion powder
Garlic powder
Paprika
Ginger
Onion flakes
Some salt and pepper
A squirt of Sriracha, honey and/ maple syrup, mustard. Rub all over.
Put on bbq at really high temp or bake in oven at highest temp for 20 minutes. Then bake at 250 until the meat hit temperature of 145.

I have a very easy and delicious recipe for sliced chuck eye.
Put sliced onions in a pan. Sliced chuck eye on top of it and make a sauce of equal amount catsup, water and brown sugar. Pour over meat and bake for 2-3 hours.
