I loved monster in law. fun, funny, light, and slightly crazy. and then you have the stellar cast of JLo, Wanda Sykes and Jane Fonda.

For just you and DH I’d recommend crazy stupid love, the proposal or just go with it.
Probably crazy stupid love first though, it’s very funny. Just go with it is also funny but I think can be a little over the top
The proposal is very cute but much more “romcom” than the rest
Monster in law I did not like whatsoever, it was not made well and very boring
Princess bride is a great movie but probably good to save for the family. Also it would probably be the heaviest of all the options in my opinion

I would still vote princess bride as I can watch that one over and over ... Although the only other one I saw was the proposal and it was very cute. It's not one I can see watching again and again

Some scenes in crazy stupid love are not the cleanest. Just to let you know. In case you’re looking for something lite.
I saw the proposal years ago, I liked it, but don’t remember all the scenes. Worth watching.
Princes bride is more of a young adult movie. Lite romcom.
I rcently watched monsterinlaw free.
If you have prime watch the love punch with pierce brosnan and emma thompson-

Netflix and prime have some good ones that are free.
If you prefer ones you mentioned then crazy stupid love and the proposal.
The first one has a good story line. The second one is more comedic.

I'd go with Crazy Stupid Love for your situation. The Princess Bride is a great movie but it's more of a silly comedy than a romantic comedy. I don't really remember CSL but I remember DH and I both thought it was funny and enjoyed it. The Proposal is more of a movie you watch with your girlfriends (romcom), and the others weren't that good.
