This is it. I have several sizes.
Convenience Concepts Xtra Storage 3 Tier Wide Folding Metal Shelf, Black https://www.amazon.com/dp/B005.....ss_tl

I hope it copied properly.

It’s super easy to assemble. My ten year old can do it.

Everything is hard. But one of the things that stands out in my mind (I was only home for all of pesach the year of covid, and two other years I turned over but only needed to cook for chm) is that since we use very minimal processed food I spend all chol hamoed on my feet cooking.
Want to make cookies? Ok let’s shell and grind nuts so we could make that super easy cookie recipe with 3 ingredients.... (and of course then have to wash the food processor... it’s all part of it)
Things like that.

Is it easy to take apart and put back together every year for small storage?

The one I have just clicks together. No tools needed. And unclicks.

I think this one is more similar in size to the one I have:

https://www.homedepot.com/p/HD.....06678

Its lightweight and we just unassemble and store after Pesach.

I find those last few days so stressful. Everything else you can plan out and be organized about even if it's hard but the 2 days before pesach there are just certain things that can't be done before and the kids are all home and it's a juggling act with eating chometz vs not and where....the anxiety and mental focus of those few days after a long while of already planning and cleaning and shopping and cooking is something I dread.
I have learned though that all the spring cleaning (organizing and decluttering) when done before Purim makes those couple days easier. If you've already organized the bathroom closet and can see what's in there and have thrown out old things then bedikas chometz is a quick peek and then you move on. And it's less tempting to start organizing your clothes and pantry when you need to be doing other things the week before pesach bc you already did it. Love those years that it's doable.

The one I linked folds basically flat. It can be stored in a narrow space.

Don't any of you have toddlers who would love to shove everything off the open shelves in one fell swoop? None of these linked products would work for me.

That's your hardest part lol? Is there any place to give it away?

We live in Israel. I can give it to a gemach that sells it, or to an Arab from one of the nearby towns, but those both feel like second best choices. We try to finish up what we have. It's not that hard.

The hardest part for me is thinking about the cleaning, not the actual cleaning.

The organizing before the cleaning.
Keeping people fed and clothed when I'm cleaning. There's just too much to do! and stopping in the middle to feed people or do laundry throws me out of sync.

The trick is to keep it clean all year round - wipe down spills, sticky bits, etc.
I know easier said than done.

My hardest part is cooking with different utensils, small toaster oven (we don't kasher and use our regular one), sticky covered surfaces that you can't keep properly clean.
And having to come up with a varied menu out of matza, eggs and potatoes!

Cleaning and clearing! Dh and I are both hoarders at heart. Our house is soooo crammed full with stuff, every room and every corner. It makes Pesach cleaning and searching for chametz a mission impossible. During the year one can choose to ignore it but not before Pesach. I envy other people for their "empty" easy-clean houses. And we have no cleaning help and also can't just lock up, sell and go away for Pesach. Banging head

The hardest part, as usual, is not eating the food while I'm making it LOL

That my family wants to be fed erev Pesach and the couple days leading up to it. Can't they just subsist on bananas and apples and the occasional piece of chocolate like me?
