Mix sugar, oil, almond flour until you get crumbs.
Cook apples in a little bit of water with some sugar,
Press half the crumbs into a pan. Pour apples on top. Sprinkle the rest of the crumbs. Bake.

Nut-free Pesach is hard! I have an apple cake/kugel recipe but haven’t taken out my Pesach stuff yet. It involves separating eggs. Let me know if you’re interested.

"Mom's Apple Kugel" - Esther Boehm

6 apples, peeled and sliced thin
sugar and cinnamon, to taste, for sprinkling
4 eggs
1/2 c. potato starch
1 tsp. baking powder
1 c. sugar
1/2 c. oil

Preheat oven to 350. Layer apple slices in a greased pan (I use pyrex). Sprinkle cinnamon sugar over the apples. Mix remaining ingredients and pour over the apples. Bake for 1 1/2 hours. This is like dessert! So easy, and is now called my daughter's "famous apple pie".

Chag kasher v'sameach!

Thanks for this recipe, will try it ih.
Is the bake time a typo. 1 1/2 hours seems like a lot.

I made up a really yummy apple kugel recipe. Sorry I don’t have exact measurements right now. I peel and cut apples (maybe 5 in a 9x13) and bake till soft enough to mash. I separate 10 eggs and add the yolks to the mashed apples with some sugar and lemon juice. Beat the egg whites and fold into the apple mixture. Bake till done.
