Has anyone baked chicken cutlets with gluten free plain panko crumbs? My sister in law is gluten free so I found 2 different types of coating: gluten free plain panko crumbs and gluten free flavored coating crumbs. I'm more tempted to bake the chicken cutlets with the plain panko, as panko bakes better, but I'm worried that might be too bland. Has anyone ever used them for baking? I don't want to fry the chicken cutlets.

Can you use something like Italian salad dressing or honey-mustard to stick in the Panko to the chicken? It should be tasty and fine

Mix up a few spoons of mayo with lots of seasoning (taste it and make sure it's really tasty).
Coat the cutlets in the seasoned mayo and mix well. Then dredge in the crumbs.

If you don't want to use mayo, then dip chicken cutlet in egg and then in panko crumbs. Mix panko crumbs with spices such as garlic powder, salt, black pepper, etc. and it gives it a good taste.
