If you’re looking for parev you can use parev milk. I’ve had success with coconut milk but whatever you normally use would probably work too. For pesach, I’d just bake it crustless (oil the pan first), but I think there are pesach crust recipes out there.

Milk is fine just not cheese.
Yeah I guess you can call it a kugel! Still need recipe. I don't have access to NYT
