Oh, I just remembered! I made an eggplant salad that I saw on Instagram from someone who normally has great recipes. It was a fail.

I use jar marinara and 1/2 the amount of meat.
Chol hamoed lunches - cooked before pesach so not busy in mornings
Roosevelt’s broccoli quiche in potato crust
Eggplant Parmesan using pesach crumbs
Cheese latkes
Shredded potato pizza crusts (just potatos and eggs pre-baked into pizza crusts)
Easy chol hamoed suppers cooked in crockpot all day
Pepper steak
Minute roast and potatos
Greek yogurt cheesecake in pesach crumbs crust
Doughless potato knish with no pots. Boiled potatoes in oven and fried onions in oven. Easier cleanup.
Got a milchig Betty Crocker pizza maker. Barely used our milk frying pan or toaster oven. Made breakfasts and lunches a breeze and can travel well.
Naomi nachman cholent. My kids said it’s the only one to make for pesach. Sounded disgusting but they loved it

I bought little 3x3" foil pans. They were the perfect size for mini sweet potato pies.
