The recipe from Fresh & Easy is perfect. Creamy and gooey - heavy but fluffy, if that makes sense.

5 lb Idaho or Russet potatoes, peeled
1 large onion
8 large eggs
3/4 cup oil
1/2 cup boiling water
4 tsp salt
1/8 tsp black pepper

Preheat oven to 350°F. Line a 9x13 pan with parchment paper (so you get full slices without crust left behind).
Grate the potatoes and onion. Mix in the eggs, oil and boiling water. Season with salt and pepper.
Transfer the potato mixture into a 9x13 inch pan. Bake for 2 hours, uncovered.

This is my favorite recipe and was going to recommend just wasn’t sure if it’s considered “heavy”.

This is my exact recipe minus the onion and just 1Tbsp salt.

This recipe is really delicious and perfect.
8 Idaho potatoes
1 large onion
7 eggs
1 1/4 oil cup .... I use avocado or light olive oil
1 1/2 tablespoon salt ...I use sea salt
Blackpepper

Preheat the oven to 475. Grate on onion with the s blade then add the rest of the ingredients besides the potatoes. Do not over mix, just till it's incorporated. Put in the pan. Then grate the potatoes with the kugel blade. Mix all together. Bake on 475 for 1 hour and then lower it to 350 for another hour or so.

If you use parchment paper for potato kugel, do you find that the oil seeps through it (instead of being in the kugel)? I tried it once and there was a puddle of oil under the paper.

Lol I use the search function on imamother using keywords of my previous posts when I'm looking for something specific. About recipes, I keep everything typed up on the computer (and printed copies of the typed doc in a binder).

I know this is old but I want to try this, just clarifying which blade you use, the regular grating blade or the kugel blade.
