Chocolate Cheesecake Squares

Ingredients
Makes 9
• Nonstick cooking spray
• 8 chocolate wafer cookies
• 1 bar (8 ounces) reduced-fat cream cheese
• 1 cup reduced-fat sour cream
• 1/3 cup unsweetened cocoa powder
• 2 tablespoons cornstarch
• 3/4 cup sugar
• 1 large whole egg plus 1 large egg white
• 1/3 cup semisweet chocolate chips
Directions
1. Preheat oven to 325 degrees. Coat an 8-inch square baking pan with cooking spray. Line with two crisscrossed pieces of parchment or wax paper, spraying between sheets. Spray lined pan; set aside.
2. Process cookies in a food processor until finely ground. Gently press crumbs into bottom of prepared pan (do not rinse processor bowl).
3. Blend cream cheese and sour cream in food processor until smooth, scraping down sides of bowl as needed. Add cocoa, cornstarch, sugar, egg, and egg white; process until smooth. Pour into pan; sprinkle with chocolate chips.

Here's one I have made and its delicious!

Brownie Layer:
6 Tblsp margarine, melted
1 1/4 cup sugar
1 t vanilla
2 eggs
1 cup + 2 Tblsp flour
1/3 cup cocoa
1/2 t baking powder
1/2 tsp salt

Cheesecake Layer:
3 8oz packages cream cheese, softened
3/4 cup sugar
3 eggs
1 t vanilla

Preheat oven to 350. Grease 9 inch round springform pan.
Mix marg, sugar, vanilla, then add eggs. Mix in rest of ingredients and spread in pan. Bake 7 minutes (will not be done).
Beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each. Stir in vanilla. Spoon mixture over brownie and continue baking 45-50 minutes, until almost set. Remove from oven to wire rack and loosen sides with a knife (so it doesn't stick to sides of pan). Let cool and refrigerate a few hours. As an optional topping you can melt 2 bars of torino chocolate and spread on top, once its completely cool - YUM!

Do you pour on the chocolate and let it harden? Is it like a hard chocolate layer on top then?

Also did you ever try this in a toaster oven? Do you think it will work?

Yes, it hardens after you spread it on. You might have to add a bit of marg. or oil so it melts smooth, but it makes it look really nice, like a 3 layer cheesecake.
Actually I have only made it in a toaster oven!

INGREDIENTS:
4 (1 ounce) squares unsweetened baking chocolate
1/2 cup butter or margarine
2 1/4 cups sugar, divided
5 eggs, divided
1/4 cup milk
2 teaspoons vanilla, divided
1 cup flour
1/2 teaspoon salt
3 (8 ounce) packages cream cheese, softened
1/2 cup sour cream

DIRECTIONS:
1. Preheat oven to 325 degrees F. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add 1-1/2 cups of the sugar; mix well.
2. Add 2 of the eggs, one at a time, mixing on low speed after each addition just until blended. Add milk and 1 tsp. of the vanilla; mix well. Combine flour and salt. Gradually add to chocolate mixture, mixing after each addition just until blended. Spread evenly into greased and floured 9-inch springform pan. Bake 25 min.
3. Beat cream cheese, remaining 3/4 cup sugar and remaining 1 tsp. vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add remaining 3 eggs, one at a time, mixing on low speed after each addition just until blended. Pour over brownie layer in pan (Filling will come almost to top of pan.)
4. Bake 55 min. to 1 hour or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Let stand at room temperature 30 min. before serving. Store leftover cheesecake in refrigerator
