Following- just bought a bunch of slices on sale.

I usually make this but I'm bored!

1 large tomato , diced large
1 red pepper, diced large
1 yellow pepper, diced large
1 box mushrooms, cleaned and sliced
1 carrot, sliced in thin circles
2 jalapeno pepper, optional
10-15 garlic cloves sliced in half
paprika
olive oil
salt
cumin
turmeric
fresh cilantro, washed and chopped
4-6 slices tilapia or salmon

Combine veggies with spices, garlic, and oil, and bake at 325 for 1-2 hours covered till soft and saucy.

Add fish and herbs. Cover the fish with the vegetable sauce and bake another 30 min uncovered at 350. Remove herbs right away.
you can also cook everything in a pan.
