I thought we could start a thread about substituting ingredients - what works and what doesn't and what ratios, etc.
My first question:
I want to make a pie that calls for evaporated milk. Can I use soy milk but just put in less? how much less? I hope someone can help me!

what kind of pie? I made punkin pie that called for milk and used water. it came out just fine. I'd use an equal volume of soy milk b/c soy milk is about as thick as evaporated.

use soya milk, it works I have used it!! I have yet to find coconut milk with a chesher, but it adds a nice flavor!

Off topic but Tila, you can make your own coconut milk if you need it. I do it all the time.

Change is Inedible

I didn't have potatoes,so I substituded rice.
I didn't have paprica, so I used another spice.
I didn't have tomato sauce, I used tomato paste.
A whole can, not a half can- I don't believe in waste.
A friend gave me the recipe, she said you couldn't beat it.
There must be something wrong with her, I couldnt even eat it!!!

I just found my evaporated milk substitute recipe:

To make 1 cup use

3/4 c. silk tofu (a kind of parve milky stuff)
1/4 c. honey

for sweeter "milk" use

2/3 c. silk tofu
1/3 c. honey

Mix well until smooth and blended
