So I made a simcha recently and I got the leftovers in my freezer. Any ideas how I can repurpose roast chicken? I don't like them reheated

You can take the chicken off the bone and use it to fill blintzes
Blend with fried onions

Cut it into small pieces. Freeze some to use in chicken salad. I like to stir fry leftover chopped chicken with garlic, onions, broccoli and red peppers, and serve it over rice.

Something my kids love: Sautee onions, garlic, shredded squash, carrots, and parsnip untill soft. Cut the chicken into smaller pieces. Add the vegetables and mix with salt.

I make into chicken soup, comes out great. I shred the actual chicken and leave in soup and throw out the bones and skin once cooked.

Pulled chicken sandwiches!
Shred the chicken and reheat with bbq sauce or any sauce u like
Make some coleslaw and serve on toasted ciabatta or baguettes with any veggies and sauces that you like
We like to add pickled jalapeƱos and red onions to cut the sweetness from the sauce
